On the last day of vacation, before Dad went back to work, we decided somewhat late at night that we wanted a snack to go with coffee or tea. But we had nothing already made that would fit situation. So, playing around with some cookbooks, I came across the idea for matcha (green tea) oatmeal cookies!
They might sound strange, but they were actually quite good. Not too sweet, even maybe a little on the bitter side; and they coupled with the coffee/tea we made to go with the green cookies.
I found the recipe for these cookies from Rice Kernel, a blog/website, calling them "(Easiest) Vegan Matcha Oatmeal Cookies". We loved them and will make them again, but next maybe cook them a little less since the oven here doesn't work the same as the oven we had in Michigan.
